Corn Fritters



Ingredients:

50gcornflour
200gplain flour
1tbaking powder
1/4tsalt
1Tsugar
2eggs
1/2 cupmilk
6corn cobs, kernels removed
4Tgrated cheddar cheese
2green (spring) onions, sliced
1/2 bunchflat-leaf parsley, washed and leaves pulled, chopped
salt and pepper
4Tvegetable oil
1avocado, peeled and quartered
6 rashersbacon, cooked until crispy and cut into strips
1lemon, cut into quarters

Step-by-step:

  1. sift cornflour, plain flour, baking powder and salt into a large bowl. Stir in sugar and make a well in centre. In a separate bowl, combine eggs and milk. Gradually, add egg mixture to dry ingredients and whisk to form a smooth, lump-free batter (the batter will be quite stiff).
  2. Place corn kernels, cheese, green onions and parsley in a mixing bowl, season with salt and pepper, and add just enough batter to lightly bind the mixture (about 1 cup).
  3. Heat 2 tbsp vegetable oil in a non-stick frying pan on medium heat, then drop in 2 tbsp batter per fritter, cooking 4 fritters at a time. Cook for 2 minutes, or until underside of each fritter is golden. Turn over and cook fritters on other side. Repeat with remaining oil and batter.
  4. Top fritters with avocado, bacon and a squeeze of lemon, and serve.
